So if my screens resolution is 640x480 what would the recommended size be for a map? Just don't understand how all this works. Thanks.

Well, each tile is 32 pixels. So 640 and 480 divided by 32, is 20x15. I don't have any experience with mobile, but I believe dividing your resolution by 32 should always give you a map size that will just fit the screen.
